Objectives and competences

The main objective of this master's degree is to provide students with a detailed and specialized understanding of the techniques, science and art of traditional and artisan baking. With the programme, students will take a tour of the different types and techniques of bread, including kneading, fermentation, shaping and baking, as well as their use of high-quality ingredients, fostering creativity and innovation, graduating by stand out in the baking industry, whether as expert bakers, entrepreneurs... It covers aspects of commercial management for businesses linked to artisan baking.

Objectives

The master's degree in Artisan Bakery and Workshop Management aims to: Illustrate the origins and traditions of different products. Demonstrate and encourage experimentation with ingredients, additives and enhancers. Demonstrate the nutritional value of different products. Showcase the specific machinery required and how it is used. Explain how to develop a business plan and implement business linked to bread and its derivatives.
