Scientific advances on the etiology, diagnostic parameters and dietetic management of food histamine intolerance
The project addresses histamine intolerance, a condition associated with impaired histamine metabolism due to DAO enzyme deficiency. It aims to enhance understanding of the disorder's causes, diagnostic criteria, and dietary management. The research involves assessing DAO enzyme function and genetic variants in both healthy and intolerant individuals, exploring the role of intestinal microbiota, and evaluating the interaction between pharmacological drugs and DAO enzyme through various methods. Additionally, the study investigates changes in the urinary metabolome for potential diagnostic markers. Seeking new sources of DAO enzyme, the project assesses the clinical efficacy of low-histamine diets and DAO supplementation for managing histamine intolerance, combining clinical and basic science approaches.
