Objectives and competences

This master's degree has an international approach, in which pastry is not only understood as a result of the transformation of agri-food products, but as a process that requires constant innovation and dedication, the results of which, sometimes, can be described as authentic works of art. The master?s degree offers conceptually, theoretical and, above all, practical training on techniques and trends in patisserie, so that students develop an understanding of the current requirements of demand focused, for example, on vegetarian cuisine, slow food, or meeting the needs of gluten-intolerance, among others.

Objectives

To train as a professional who wishes to strengthen, create and propose new options relating to patisserie.

To acquire the state-of-the-art conceptual and technical tools needed for professional development in a dynamic, international and innovative culinary setting.

Applicant profile and access requirements

Recommended applicant profile

Graduates, undergraduates or diploma holders in fields related to gastronomy, food sciences or health, who can obtain a master's degree in continuing education.

Pastry professionals with demonstrable experience of between two and three years in restaurants, gastronomic restaurants, workshops, hotels or establishments that are members of the Relais & Châteaux association, or holders of diplomas related to haute pastry, who can obtain the higher university diploma.

Access requirements and conditions

The course is also open to students with no prior university education, who will acquire the same knowledge and skills and receive a specific qualification for their learner group. Information on the access requirements and other conditions can be obtained from the course directors.
