Objectives and competences

In a gastronomy scene that is constantly changing, in which tradition and avant garde aim to revolutionize cuisine with a sustainable vision and create unforgettable taste experiences through the use of high-quality products, this master's degree addresses all the related aspects and is based on sustainable innovation in the selection of products and the techniques that are applied. It is led by three recognized chefs, specialized in three basic gastronomy products: Xavier Pellicer, Rafa Zafra and Oriol Rovira.

Objectives and competences

Objectives

- To gain knowledge of innovative forms of food product management in haute cuisine linked to sustainable, circular and ecological models of production, distribution and marketing.
- To receive training designed by Michelin-starred professionals who have implemented both innovative culinary techniques and ways of selecting and handling food products based on sustainability and knowledge of local varieties.

Recommended applicant profile

- Students with a bachelor's degree, pre-EHEA degree, diploma, engineering degree, architecture degree, technical engineering degree or technical architecture degree, an equivalent university qualification or proof of professional experience
- Students who hold a UB-specific degree or an undergraduate degree issued by the University of Barcelona can be also admitted to postgraduate courses, as these degrees are considered equivalent university qualifications for this purpose.
- Applicants who do not hold the required university qualification can be admitted to the programme and opt for a diploma or university extension certificate with the same name and number of credits as the postgraduate course.

Access requirements and conditions

The course is also open to students with no prior university education, who will acquire the same knowledge and skills and receive a specific qualification for their learner group. Information on the access requirements and other conditions can be obtained from the course directors.
