Objectives and competences

The master's programme focuses on developing an in-depth knowledge of vegetarian and plant-based cuisine, as well as acquiring an understanding of the nutritional foundations underpinning this lifestyle. During the programme, students will explore a wide variety of culinary techniques, from the most basic to more advanced techniques, with the aim of creating innovative, delicious, nutritious and sustainable dishes from plant-based ingredients. Creativity in the kitchen will be encouraged, allowing participants to develop their own style of cooking based on a plant-based diet.

Objectives

Acquire a solid knowledge of nutrition and culinary skills with plant-based ingredients, including the identification of key nutrients, dietary guidelines and health benefits of diets with plant-based ingredients, as well as the most appropriate flavourings and techniques for desirable menus.

Recommended applicant profile

- Students with a bachelor's degree, pre-EHEA degree, diploma, engineering degree, architecture degree, technical engineering degree or technical architecture degree or an equivalent university qualification.
- Students who hold a UB-specific degree or an undergraduate degree issued by the University of Barcelona can be also admitted to postgraduate courses, as these degrees are considered equivalent university qualifications for this purpose.
- Applicants who do not hold the required university qualification can be admitted to the programme and opt for a diploma or university extension certificate with the same name and number of credits as the postgraduate course.

Access requirements and conditions

The course is also open to students with no prior university education, who will acquire the same knowledge and skills and receive a specific qualification for their learner group. Information on the access requirements and other conditions can be obtained from the course directors.
